„Flat strudel“ with spinach

The „flat strudel“ was created because my two little ones (2 and 5 years) helped me cook and wanted to do everything ALONE. In addition, all of us prefer the crispy dough on top of the puff pastry strudel … and the „flat strudel“ has a lot of crispy dough ;-).

Of course, it is filled with ingredients rich in spermidine!


Preparation

Brush an oven tray with olive oil.

If you want to make the strudel dough yourself, start with it. Knead the flour with water, salt, vinegar and oil, form a ball, brush with oil and let rest for half an hour at room temperature. Then divide the strudel dough into two parts. Roll out the first piece on a floured surface with the rolling pin thinly (as large as an A4 page). Then gradually increase with both backs of the hands (fingers slightly curved inwards) by pulling until the dough is about the size of the oven tray and place on it. Doesn’t have to be beautiful and can still be touched up on the sheet.

Mix the creme fraiche, sour cream, salt & pepper, lemon juice and zest, finely chopped herbs and garlic into a paste.

Brush the dough on the baking sheet with the paste. Do not brush the edge of the dough, so that there is an approx. 1-2 cm edge.

Top with all ingredients as desired. The spinach can also be frozen on it. Alternatively, you can thaw it to be able to distribute it a bit better.

Then cover all with the second dough and press the two dough surfaces together at the edges with your fingers so that no sauce runs out while baking.

Brush the top dough with olive oil and put it in the oven for about 30 minutes (180 ° C upper / lower heat) until the outside is golden brown.

A yogurt dip and a salad go well with it!

Ingredients

  • 2 packs of puff pastry / strudel dough (or homemade strudel dough)
  • 1 pack of frozen spinach dwarfs (approx. 400 g)
  • 1 feta cheese (150 g)
  • Kalamata olives (approx. 100 g)
  • semi-dried tomatoes (approx. 100 g)
  • 1 cup creme fraiche (125 g)
  • 1/2 cup sour cream (125 g)
  • 1 clove of garlic
  • Salt & pepper
  • 1 handful of herbs (rosemary, oregano, thyme)
  • 1/2 lemon (zest and juice)
  • Olive oil (for brushing)

Alternative fillings rich in spermidine are all types of vegetables and legumes (e.g. broccoli, peas, beans) and mushrooms.


Ingredients for the optional homemade strudel dough:

  • 200 g plain flour
  • 1 tsp salt
  • 1 tablespoon of oil
  • ½ tsp vinegar
  • 1/8 l lukewarm water

Ingredients for yogurt dip

  • 1 cup of yogurt
  • salt pepper
  • 1 finely chopped clove of garlic
  • Herbs of your choice or curry powder
