Potato patties with Dandelion salad

These days we want to eat a particularly healthy diet and strengthen our immune system. Spermidine-rich diet helps our body to stay fit and healthy. In addition, spermidine could have a positive effect on the immune system.

A fresh salad goes well with that. E.g. Dandelion salad. We posted this recipe last spring.

Whoever has the opportunity to collect the first fresh green edible plants, such as dandelions, daisies, chickweed etc.. They can be used to make a good salad without shopping.

With the dandelion salad we had potato patties today. You can make the patties from the basis dough or optionally add a few ingredients. We have two sperimidine-rich variants you could try.

Potato patties with Dandelion salad

Ingredients for 4 people

Basis dough for the potato patties

  • 1 kg of mealy potatoes
  • 1 egg
  • 5 tbsp of flour approx. 70 g
  • 2 tbsp potato flour approx. 25 g (also goes with plain wheat flour)
  • 1 onion
  • 1 clove of garlic
  • Herbs (thyme, marjoram, oregano)
  • salt and pepper
  • 2 tbsp lard for baking (also butter or vegetable oil works)

Optional ingredients for the potato patties

Variant 1

  • 50 g dried tomatoes (if pickled, drained well)
  • 2 tbsp wheat germ meal (approx. 30 g)
  • 1 handful of sunflower seeds (approx. 30 g)
  • 1 handful of pumpkin seeds (approx. 30 g)
  • 100 g feta

Variant 2

  • 1 small onion
  • 100 g mushrooms
  • Salt pepper

Preparation

Cook the potatoes with the peel.

If you use optional ingeredients it is now time to prepare them (see below).

Peel the potatoes and press them -while still hot- through a potato press (if not available, mash them). Stir the egg, flour and potato flour into the warm mass and season with salt and pepper.

Use your hands to form a ball, then patties, turn it into a little bit of potato flour on both sides and fry it on both sides in a pan with hot fat over medium-high heat. Not too hot so that the patties don’t burn but have enough time to cook well.

Patties can be „collected“ in a baking dish and kept hot in the oven at 160 ° C.

Tip: a salad with potatoes and garlic, e.g. dandelion salad goes well with the potato patties. Therefore, you can simply cook about 3 potatoes more and cut them into slices in the salad marinade.


Optional ingredients

Variant 1: chop the onion and fry until golden. Add chopped garlic, sunflower seeds, pumpkin seeds, wheat germ meal, feta, dried tomatoes and spices. Add to the basis dough before shaping the patties.

Variant 2: Chop the onion and mushrooms, fry until golden and season with salt and pepper. When forming the patties, always pack 1/2 tbsp of the mushroom mass in the middle of the patties.
