Mushrooms are very rich in spermidine and even when dried they still contain a lot of spermidine. This year we found beautiful porcini mushrooms and dried them. These are great for risotto or soups! Potatoes are moderately high in spermidine, but the fact that we eat large amounts of it makes them a source not to be underestimated. For the eye and a special taste, we like to top the soup with salted, roasted pumpkin seeds, which like all seeds contain a lot of spermidine.

Ingredients (for 4 people)
- 4 medium-sized potatoes
- 1 large carrot
- 1 piece of celery
- 1/2 onion
- Handful of dried porcini mushrooms
- Marjoram and thyme
- Salt & pepper
- 1 tbsp creme fraiche
- 1/2 tsp vinegar
- 1 tbsp oil
Preparation
Heat the oil with roughly diced carrots, celery and onion in a pot. When it gets color, add water and add peeled, chopped potatoes. Add dried porcini mushrooms, herbs and salt and cook until everything is cooked through. Add the creme fraiche and mix it well. Season to taste with vinegar, salt and pepper. Depending on how thick you want the soup, add more water. Briefly roast the salted pumpkin seeds in the pan and place them on the table for everyone to take.
