In order to make your diet more spermidine-rich, but still be able to cook and eat your beloved (perhaps not particularly spermidine-rich) dishes, we recommend spermidine-rich side dishes! Having a salad with every main meal is definitely a good idea. In the summer, this is easy, but in autumn and winter, most people do not think of salads.
That’s why today we present our autumn salad with radicchio, fennel, apple, mushrooms and walnuts!

Ingredients (for 4 persons as a side dish)
- 1 head radicchio
- 1 medium-sized fennel
- 1 medium apple
- about 10 mushrooms
- at least 12 walnuts (a handful for each person)
- Olive oil, balsamico, salt, pepper, 1 teaspoon spicy mustard, 2 teaspoons berry jam

Preparation
Cut the mushrooms into thick slices (at least 0.5 cm) and sauté in oil until golden brown on both sides. Do not pluck the leaves of the Radicchio, but halve the head and lay with the cut surface down on the chopping board. Then use a large (sharp) knife to cut the salad into approximately 0.5 cm thick strips, rinse with water and drain. Cut the fennel and the apple into very thin slices (0.1 cm).
Mix ingredients for the salad dressing in the salad bowl and mix the salad, apple and fennel with the dressing. Garnish with the fried mushrooms and walnuts before serving!

We enjoy the salad with blood sausage crostinis. That’s a nice thing to serve relatives on Halloween! Such a delicious black pudding is a nice and delicious alternative to all the „food color blood“ ;-)!
Slice white bread for the blood sausage crostinis. Finely chop the onion and sauté in the pan. Peel the skin off the blood sausage and fry the blood sausage filling in the pan for about 5 minutes. The filling gets the same texture as minced meat when it gets hot. Then spread the black pudding mass on the bread and place in the oven for about 10 minutes at 180 ° C top / bottom heat.
Serve while still hot!
