We all love it: egg dish and if you make it at home, here are some tips on how you can improve it to a healthy spermidine-rich breakfast.
We stretch the egg dish with spermidine-rich ingredients, which not only tastes good, but also enhances the whole thing. We use mushrooms, broccoli, celery, hard cheese and pumpkin seeds.
First, cut the vegetables: celery and mushrooms in slices and in the case of broccoli halve or quarter the florets, depending on their size. Cut the bacon thin so that it becomes crispy when frying.
Then roast the pumpkin seeds in the pan. Roast a tbsp of oil with the pumpkin seeds and a pinch of salt in the pan, stirring constantly until they get a little color. Remove from the pan in a bowl and set aside. In this pan, fry the mushrooms, celery, broccoli and bacon (optional) with 2 tbsp of oil in a pan.
In a bowl, whisk 2 eggs per person with chopped green onions and hard cheese cubes and salt, pepper and herbal mixture (according to taste) and pour into the pan to the vegetables. Stir a few times and fry until the egg is no longer liquid (but not too long otherwise, it will be too dry).
We enjoy the egg dish garnished with the pumpkin seeds and a whole meal bread with butter + cress on it.

Alternative: Spermidine-rich Tortilla
If you feel like it, you can make a Spanish tortilla for 4 people (8 eggs) using the same ingredients. In addition, dice 4 potatoes and fry in the pan with a little oil. Mix the fried vegetables and potatoes with the egg mass and fry in a frying pan over low heat (until it is barely liquid at the top anymore). Then turn everything around with the help of a large plate, let it slide in the pan and fry shortly from the other side (see photos). Is a good dish for a brunch and can be also eaten cold!
