A good source of spermidine are whole grains. We love fresh whole meal bread for a snack. These colorful bread spreads are something for the eye and the palate. For the spreads, we use spermidine-rich ingredients such as lentils, beets, sunflower seeds and liver.
Red lentils spread
Ingredients
100 g red lentils
200 ml of water
1 bay leaf
1 clove
Some green of a spring onion
30 g of butter
1 tbs sweet paprika powder
Salt and pepper
Preparation
Wash lentils and simmer in salted water with bay leaf and clove for 10 minutes. Remove spices and purée with butter. Season with finely chopped onion, paprika, salt and pepper.
Beets spread
Ingredients
200 g boiled red beets
Juice of about a ½ lemon
2 tsp honey
50 g of sour cream
1 tsp grated horseradish
Salt pepper
Preparation
Dice the cooked red beets and puree or finely chop. Stir in sour cream and season with lemon juice, honey, horseradish, salt and pepper.
Sunflower Seed Butter
Ingredients
100 g sunflower seeds
80 g butter
a handful of parsley
salt
Preparation
Finely chop the sunflower seeds in the hacker. Add the roughly chopped parsley and chop it further in the hacker with the seeds. Mix in cold butter. Season with salt.
Liver spread
Ingredients
1 kg of pork fat (best belly, head meat)
200 g liver (pork or veal)
100 g onion
20 g salt
1 tsp anchovy paste
1 handful of parsley
½ tsp chopped lovage
1 tbs chopped chives
1 tsp chopped marjoram
1 small garlic clove pressed or finely chopped
1 tsp pepper
½ tsp grounded ginger
In each case 1 pinch of nutmeg, allspice, clove powder, coriander ground
Preparation
Cook meat and mince twice. Mince the liver twice. Mince the raw onion. Mix all ingredients and fill into screw cap jars (note: do not fully fill). Close the jars and leave to soak in a water bath or steamer at 75 ° C for 40 minutes. Lasts a few days in the fridge. You can also freeze the glasses well.
