Chickweed pesto

With fresh, young, spermidine-rich herbs, we are doing something good for our immune system. If you have the opportunity to go out into the garden or nature, you will certainly find chickweed (Stellaria media) almost everywhere.

It is a very common weed in the vegetable patch, and is often found under fruit trees. It grows all year long and can always be harvested as fresh vegetables. You can easily recognize it by its tiny, star-shaped, white flowers. It branches and grows crawling on the ground. If you are not sure while collecting, you can taste the leaves, which taste like young corn.

In the medicinal herb book „The herbs in my garden“ by Siegrid Hirsch and Felix Grünberger, chickweed is said to have antitussive, expectorant and antiviral properties! An old saying goes: what the body needs grows around the house. So keep your eyes open and enjoy!

Chickweed fits in any salad (particularly well in tomato salad), can be drunk as tea or you can make wonderful pesto from it. Everyone has noodles at home, so a pesto would be a healthy and spermidine-rich variety.

Chickweed pesto with pasta

The wohle familiy, we and the children (!) loved this simple recipe.


Ingredients (for 2-4 people)

  • 1 large handful of chickweed
  • 100 g sunflower seeds
  • Half a lemon juice
  • salt
  • Approx. 100 ml oil (sunflower oil, olive oil or similar)

Preparation

Wash chickweed and let dry a little. Chop / mix the sunflower seeds, add chickweed and chop them further. Add salt, lemon juice and oil and mix to a creamy pesto. Serve on hot pasta.
